Tikka Masala – with pearl barley and sugar snap peas
Ingredients
- 250 g Plant Mate Slices/Plant Pieces. Other Plant Mate variants are also suitable, however, Slices/Plant Pieces provide the best ‘bite’!
- 375 g onion, chopped
- 25 g garlic, minced
- 125 g oil
- 25 g ginger, grated or thinly sliced
- 200 g mushrooms, sliced
- 200 g carrot, thinly sliced
- 5 dl tomato passata or chopped tomato
- 5 dl coconut milk or cream
- 5,5 dl water
- 25 g salt (25g=4tsp)
- 20 g garam masala spice powder (20g=3tbsp)

- 250 sugar snap peas
- 20 g pearl barley or other type of grain
Instructions
- Mix water, tomato, salt, garam masala, and Plant Mate product. Let sit for about 10 minutes.
- Fry onion, garlic, and garlic in oil until transparent in pot.
- Add mushroom and carrot and fry for a few minutes.
- Add soaked Plant Mate product including any excess liquid and coconut milk or cream. Slowly, bring pot to a boil while keeping lid on – stir occasionally.
- Let dish simmer for 15-20 minutes.
- Cook pearl barley using instructions on package.
- Put sugar snap peas in a separate pot with some lightly salted boiling water. The water should not cover the peas but rather make steam. Bring pot to a boil and steam sugar snap peas for 2-3 minutes. Strain peas – they should still be crispy.
Notes
Garam Masala is a spice mix and can taste very differently.
Here is a suggestion for a good mix: Garam Masala 8,5 g cumin, ground (4 tsp) 6,5 g dried coriander, ground (3 tsp) 7,6 g cardamom, ground (3 tsp) 6,9 g black pepper, ground (3 tsp) 4,5 g cinnamon, ground (2 tsp) 2,8 g dried cloves, ground (1 tsp) 2,1 g nutmeg, ground (1 tsp)
