Fry onion, garlic, and garlic in oil until transparent in pot.
Add mushroom and carrot and fry for a few minutes.
Add soaked Plant Mate product including any excess liquid and coconut milk or cream. Slowly, bring pot to a boil while keeping lid on – stir occasionally.
Let dish simmer for 15-20 minutes.
Cook pearl barley using instructions on package.
Put sugar snap peas in a separate pot with some lightly salted boiling water. The water should not cover the peas but rather make steam. Bring pot to a boil and steam sugar snap peas for 2-3 minutes. Strain peas – they should still be crispy.
